Maya's Turkey Mix
Maya Can't Wait for Turkey Meal Time!
1 lb ground turkey meat (organic preferred)
1/2 cup each, peeled & cubed:
- sweet potato
3/4 inch peeled/diced ginger
tablespoon coconut oil (olive oil, avocado oil, vegetable oil can be subbed)
3/4 cup steel cut oats
3/4 cup quinoa
tablespoon fresh rosemary or oregano (optional)
This recipe in ideal for a multi-cooker using the saute and high pressure settings, but can easily be made stovetop.
Set multi-cooker to saute, or heat a large pot stovetop on medium-high heat; add coconut (or other oil) and let heat for a minute; add tablespoon turmeric and swirl to mix with oil.
Add pound turkey meat, break up with a wooden spoon and cook until just no longer pink.
Add all cubed vegetables and fruit, including the ginger and cook for about five minutes to soften; add oats and quinoa and stir to mix all ingredients together.
Add water to just cover mixture, and heat until it starts to bubble.
If using a multi-cooker, secure lid on pot and set valve to close pressure; cook on high pressure for five minutes and allow to release for 10-15 minutes, release pressure, and carefully remove lid.
If cooking stovetop, turn down heat to low, cover and cook about 20 minutes, until water has been absorbed and quinoa has puffed up.
Stir in herbs, if using, and fluff mixture.
Store in refrigerator for up to four days or freeze in individual portions.
